Professional orientation:      

Meat performance of cattle - evaluation of growth rate, fattening and composition of beef carcasses, classification of bovine carcasses. Breeding of beef cattle breeds, breeding technology. Nutritional evaluation and organoleptic characteristics of beef. Study of factors influencing the textural parameters of beef. Importance of post-mortem processes in meat on consumer acceptability.

The potential of non-domesticated ruminant meat to increase food safety. Chemical composition, physical and organoleptic properties of wild ruminant meat, possibilities of increasing its quality. Farm rearing of cervids and common eland: effect of nutrition on carcass composition and meat quality. Efficient farming methods in relation to meat production. Development of methods for estimating carcass composition and quality parameters of ruminant meat.
